Measure more than Brix
Soluble-solids readings are useful in the proper context but do not capture all insoluble fibre or total dry matter. Document the method and sample condition, then assess viscosity, foam and deposits as concentration progresses.
Evaluate the entire route
A feasible evaporation step must connect to product transfer, heat-treatment requirements, cleaning and filling. Include start-up, end-of-run and off-condition material in a trial and material balance.
Quote after feasibility evidence
The proposed equipment arrangement and performance envelope depend on product trials. No fixed water-removal rate, universal yield or active-ingredient-retention promise is inferred from another fruit or a laboratory extraction paper.
